Spaghetti alla gremolata

Ingrédients pour 6 personnes

350 g de Spaghetti
600 g d’épaule de veau
1 branche de céleri
1 oignon
1 carotte
1 cuillère à soupe de concentré de tomates
1 tablette de bouillon de volaille
2 cuillères à soupe d’huile d’olive
50 g de Parmesan râpé
20 g de beurre
sel
poivre

Pour la gremolata

1 orange non traitée
1 citron non traité
2 gousses d’ail
1 bouquet de persil plat


Méthode de préparation

  1. Préparez du bouillon en diluant la tablette dans 20 cl d’eau bouillante.
  2. Epluchez la carotte, le céleri et l’oignon, émincez-les. Découpez la viande en morceaux, salez et poivrez.
  3. Faites chauffer le beurre et l’huile dans une cocotte, mettez la viande à revenir en remuant jusqu’à ce qu’elle prenne de la couleur.
  4. Ajoutez les légumes, faites-les dorer en remuant.
  5. Ajoutez le concentré de tomates, mélangez puis baissez le feu.
  6. Versez le bouillon et grattez bien le fond de la cocotte pour décoller les sucs de cuisson. Couvez et laissez mijoter 40 minutes.
  7. Préparez la gremolata : lavez et essuyer les agrumes. Prélevez sur chacun d’eux une large bande de zeste et hachez-le finement avec l’ail pelé et le persil lavé. Mélangez ce hachis et incorporez-le dans la cocotte en fin de cuisson.
  8. Portez à ébulition 3 l d’eau salée, plongez-y les tagliatelles et faites cuire le temps indiqué.
  9. Egouttez- les, mettez-les dans un saladier préalablement chauffé.

Come togliere macchie dalla pelle scamosciata

Per pulire le vostre scarpe o stivaletti o stivali in pelle di camoscio, ad esempio per togliere i segni che lasciano le gocce d’acqua, potete passarli strofinando leggermente con una spugna o con un spazzolino di para, un tipo di gomma elastica chiara quasi bianca.

Per togliere macchie di catrame o asfalto, potete utilizzare diluito il solvente da smalto per unghie, assicurandovi però che il pellame non si rovini (fate una prova su un angolo poco in vista).

Esiste anche un metodo più lungo ma molto utile:

1. Munitevi di una gomma per cancellare…
Prendete lo scarponcino o entrambi, dipende da quante macchie voi vogliate eliminare, e iniziate a strofinare la gomma energicamente sulla macchia…

2. Noterete che dopo un po’, la macchia inizierà a sbiadirsi;
continuate a strofinare e se dopo vari tentativi, la macchia risulterà solo sbiadita, e non andata via del tutto, (fate molta attenzione!!!!):
riprendete la gomma per cancellare e passatela leggermente (e sottolineo leggermente!!!! Perché si sa che l’acqua rovina lo scamosciato!!!), sotto l’acqua corrente.

3. Una volta che la gomma risulterà leggermente bagnata, riprendete lo scarponcino e ricominciate a strofinarvi energicamente e nuovamente la gomma sulla macchia sbiadita.
Vedrete che lo scamosciato inizierà a scurirsi e a perdere “pellicine”, ma non spaventatevi, una volta, eliminata, secondo vostro parere, del tutto la macchia, lasciando asciugare lo scarponcino, la macchia per magia sara’ andata via…
